Prep table in the mobile food unit was holding ambient temperature at 34.1 degrees F using a min/max thermometer. Grill and canopy has been removed. Commissary agreement has been obtained and log sheet is present. Inspector will upload commissary agreement to the permit.

[Set up of an outdoor canopy with a grill for the purpose of outdooring cooking for the mobile unit. Observed canopy stand connected to the mobile food unit as an extension to the mobile unit. No prior approval has been given for the outdoor cooking or extension]. Outdoor cooking shall cease immediately and canopy extension will be permanently disconnected and removed.

Inspector's notes

Eggs, shredded cheese, sliced ham, cooked beef, and pico de gallo with internal temperatures between 58 degrees F and 62 degrees F cold holding in a prep table next to the entrance to the mobile unit. Ambient temperature of the prep table was found to be 60.9 degrees F using a min/max thermometer. PIC stated that the food had been inside the cooler since last night and was discarded. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Supervisor confirmed with owner via phone that they have not been reporting to a commissary for the entirety of 2025. Owner claimed that commissary was picking up grease for disposal. Operator also claimed that separate company was picking up waste water for disposal. Operator must report to commissary daily when they operate. Commissary will be used for items such as gray water disposal, fresh water supply, ware washing facility, food preparation facility, and garbage disposal. Ensure updated commissary agreement is provided on or before 8/22/2025. Corrective Action: Correct prior to re-inspection. MCEHC Chap. 8, Sec. 3, Reg. 5b - Mobile food establishments shall operate from an approved commissary or other food service establishment as required by this Department, and shall report at least daily to such location for supplies, food storage, vehicle and equipment cleaning, waste disposal, and service operations.
