Inspector's notes

Observed 3 packages of cooked beef holding in refrigerator at 52°F, 49°F, and 51°F. PIC confirmed the food had been cooked between 4-5 am and was cooled by fan for about an hour before being placed in the unit fridge. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

PIC confirmed various meats for service were cooked early in the morning at 4-5am and then cooled on unit for later use. Three packages of cooked beef were confirmed to be cooked at 4am and then observed holding at 51°F, 52°F and 49°F at 11 am, 7 hours later. Improperly cooled beef was discarded at time of inspection. Cooked rice was also observed on counter cooling, holding at 113°F. PIC confirmed the rice had been cooked roughly an hour prior, and was reheated at time of inspection. PIC was instructed to cease cooling on the unit, and instead wait to cook the items or hot hold on stove them throughout the day until they were served. Corrective Action: Corrected at time of inspection.

Excessive steps may include, but are not limited to, cooking overnight without oversight, cooling, or cutting large volumes of food items.
