Observed multiple ziploc bags containing shredded beef in the standing fridge with an internal temperature of 90*F. Per person in charge the beef was cooked 10 minutes prior to inspection and was attempting to cool the beef on the mobile unit. Discussed with person in charge that cooling is not allowed on the mobile unit. Instructed person in charge to reheat the beef and maintain it at proper hot holding temperatures. Corrective Action: Corrected at time of inspection.

MCEHC Chap. 8, Sec. 3, Reg. 6d, 9d, 10e, 11d - Food preparation shall be simplified to reduce excessive steps where food may become contaminated. Excessive steps may include, but are not limited to, cooking overnight without oversight, cooling, or cutting large volumes of food items. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. Employees were able to repair equipment and obtain hot water of at least 100 degrees at time of inspection. Corrective Action: Corrected at time of inspection.

Observed cooked onions sitting in a pan by the flat top grill with internal temperature of 87 degrees F. Per the person in charge, item was cooked an hour prior to this inspection. Discussed with the person in charge that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. PIC corrected by using time as control. Corrective Action: Correct at once.
