Inspector's notes
Observed an in-use ice machine with green, slimy, organic-like material growing above the ice maker. Per PIC ice from the machine is used in customer drinks. Educated PIC that ice is considered a food item when used in customer drinks. Instructed PIC in clean-in-place procedure using a hot soapy rinse, hot water rinse, and hot water plus sanitizer rinse. Correct by next routine inspection.

Establishment was observed cooking, cooling, and storing 1 time-and-temperature control for safety (TCS) food item - hard-boiled eggs. Advanced preparation processes such as cooling are not permitted on a Class 2 E&D permit. Will follow up with owner regarding upgrading of permit to Class 3 E&D.On July 1st, 2023, the Environmental Services Department started emailing permit card(s) and permit invoice(s) to permittees.
