Inspector's notes

Unit did not have hot water at hand sink at time of inspection. Upon investigation, the unit's water heater had lost power due to problems with the battery compartment. Operator was unable to determine the source of the power loss at time of inspection. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PIC must produce hot water at hand sink bt next day re-inspection. Corrective Action: Correct within 24 hours.

Inspector's notes

Observed prep table cold-holding unit near 3-compartment sink holding at 45 degrees Fahrenheit. Inside unit, cooked chicken (56°F, 53°F), salsa verde(49°F), and salsa rojo (55°F) were all observed reporting above 41°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. PIC verified they had kept the fridges on overnight with the food inside. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed no running water at time of the inspection. Per the operator, their water pump over heated and burst, so they have no running water, and voluntarily close the unit. Discussed with operator that a permit holder shall immediately discontinue operations and notify the regulatory authority if an imminent health hazard may exist because of an emergency such as extended interruption of electrical or water service, or other circumstance that may endanger public health.
