Inspector's notes

Observed cooked chicken with internal temperature of 121 degrees F. sitting in the steam table. Per the operator, they had turn down the temperature two hours prior to this inspection. Discussed with operator that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Operator corrected by reheating to 165 for proper hot holding. Corrective Action: Correct at once.
