Observed brown/ golden/ black buildup of grease and residue on back panel of equipment under hoods, metal pipes/ gas lines between equipment, floor under and around cookline, HVAC vents, and ceiling panels. Discussed cleaning frequencies and procedures. Establishment has hood deep cleaned by professional hood cleaning company on a quarterly basis. It was last done in January. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Discussed the need to start cleaning described areas. Second consecutive violation. Instructed PIC to make progress in these areas needing to be cleaned and a follow up visit will be conducted in 2 weeks to verify progress of cleaning.

Core-4-501.11, C: Good Repair and Proper Adjustment-Equipment --Observed handle of the walk-in freezer door not latching completely, leaving the door unsealed. The freezer was maintaining proper temperatures. Discussed need for all doors to close automatically and shut completely with the Person in Charge (PIC). Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications.
