Inspector's notes

Observed no commissary visit logs. Advised PIC to store signed and dated commissary visit logs inside the unit. Mobile food establishments serving time/temperature control for safety foods shall maintain a log of visits to the approved commissary or food service establishment as required by this Department. This log shall be maintained using a Department approved format and maintained with the establishment at all times. The logs shall be maintained for a period of 30 days and should be available for review by the Department. Corrective Action: Correct prior to next routine inspection. MCEHC Chap. 8, Sec. 3, Reg. 9e - MF Type III-All cooking, processing, preparing, grilling, assembly, storage, and service of any food or beverage shall be conducted inside the permitted vehicle. Addl Notes: Observed raw shrimp and octopus on ice stored in several ice chests outside the unit since 10am. Employee relocated the raw shrimp and octopus inside the unit. Advised PIC that all cooking, processing, preparing, grilling, assembly, storage, and service of any food or beverage shall be conducted inside the permitted vehicle. Corrective Action: Corrected at time of inspection. MCEHC Chap. 8, Sec. 3, Reg. 5b - Mobile food establishments shall operate from an approved commissary or other food service establishment as required by this Department, and shall report at least daily to such location for supplies, food storage, vehicle and equipment cleaning, waste disposal, and service operations. Addl Notes: During time of inspection, PIC stated that the unit goes to the commissary once a week, but they operate at least five days per week. Advised PIC that mobile food establishments shall operate from an approved commissary or other food service establishment as required by this Department, and shall report at least daily to such location for supplies, food storage, vehicle and equipment cleaning, waste disposal, and service operations. Corrective Action: Correct prior to next routine inspection.

All ROP fish labeled "Keep Frozen" must be removed completely from reduced oxygen packaging (ROP) prior to thawing under refrigeration or immediately after thawing under cold running water. All ROP fish was removed from ROP packaging at time of inspection. Corrective Action: Corrected at time of inspection.

-- At the time of inspection, the hand sink was not working. Per PIC, the pump needs to be replaced, and a plumber is on their way for repairs. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. At the time of inspection, a temporary hand sink setup was provided so that the mobile truck could continue operating safely until plumbing repairs are completed. Establishment has sufficient handwashing station capacities to safely remain open until repairs can be completed. A re-inspection will be completed within 24 hours to verify a working hand sink is available. Corrective Action: Correct within 24 hours.

Requested shrimp be placed in food grade bag at the time of inspection. Corrective Action: Corrected at time of inspection.
