Predefined Comment: Due to the violations noted on this inspection report, County legal action may result from this inspection.Predefined Comment: Establishment was observed operating outside the scope of their approved operating permit in violation of MCEHC Chap. 1, Reg. 4(a). Facility is a type 2 unit, and is cooking raw hamburgers at the unit, and doesn't have a processor permit. Facility had shared with them about type 2 requirements. Manager said would seek a type 3 permit for the vehicle.

Observed hot dogs and pulled pork at 105-115F inside the hot hold machine. Facility reheated product back up to 165F during service. Ensure that all hot holding is kept at 135F or more at al times. Corrective Action: Corrected at time of inspection.
