#57 — MCEHC Mobile Food RequirementsCounty code (MCEHC)MCEHC Chapter 8, Section 3, Regulation 8i(5)

Please correct the following: Add separation on drain board on 3-compartment sink to allow for separate storage of clean and dirty dishes or add secondary drain board for storage of dirty dishes only. Per MCEHC Chapter 8, Section 3, Regulation 8i(5): "Two-integral metal drain boards shall be permanently affixed that are the same depth as the 3-compartment sink and 144 square inches." Therefore at least 144 square inches of space must be allocated for clean and dirty dishes without risk of contamination between them. Corrective action: Correct prior to next routine inspection.
