Inspector's notes

Observed queso cheese dip at 103°F in metal bucket under inoperable heating element. Queso was removed from hermetically sealed package that indicated that the queso must be kept hot held after opening for safety. PIC confirmed bag had been brought into the unit from refrigeration and opened within the past 2 hours. Cheese was reheated and placed under hot holding once heating element was turned back on. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.

Inspector's notes

One of the unit's 4 cold holding units near hand sink observed reporting at 50°F. Other units were reporting well. Food items in unit were still partially frozen and reporting below 41°F. All TCS product in fridge was moved to other cold holding units at time of inspection. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct prior to re-inspection.

PIC confirmed water from handwashing station was emptied directly in to grass below unit. Observed visible hardwater and soap scum below truck from hand sink dumping. PIC said all dishes and grease were disposed of in nearby commissary facility. Per MCEHC, Wastewater holding tanks shall be emptied into an approved sewage disposal system. Corrective Action: Correct at once. MCEHC Chap. 8, Sec. 3, Reg. 5g - Temporary toilet facilities shall not be located within 25 feet of any mobile food establishment. Addl Notes: Observed temporary toilet facilities within 15 feet of permitted truck. Per MCEHC, temporary toilet facilities shall not be located within 25 feet of any mobile food establishment to prevent contamination. Corrective Action: Correct prior to next routine inspection.
