At time of inspection, observed cooked carne asada with an internal temperature of 84*F and cooked pastor with an internal temperature of 110*F both located at the steam table. Per person in charge the food items were prepared about thirty minutes prior to the inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Instructed person in charge to reheat the food to 165*F for 15 seconds and maintain at 135*F or above. Corrective Action: Corrected at time of inspection.
