Observed no certified food protection manager at time of the inspection. Per the person in charge, their wife is certified but was not available at time of the inspection. Discussed with the person in charge, that a Certified Food Protection Manager (CFPM) is required to be on the premises during all hours of operation. Discussed with the person in charge that the hand sink must be maintained assessable at all times during operation and must be maintained in a condition that promotes handwashing.
