Inspector's notes

Observed several Time/Temperature Control for Safety (TCS) foods hot holding in a steam table and temping between 120-125 F, including cooked beans, cabeza, and chicharron. Per PIC, the food has been hot holding since 9am this morning. PIC voluntarily discarded the food. Advised PIC that except during preparation, cooking, or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed raw ribeye steaks in a deep metal pan on bottom shelf of cold holding fridge reading at 50°F. PIC stated that meat had only been in fridge for about 10 minutes prior to beginning of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. PIC was instructed to move the steaks to a shallow pan and place in an ice bath for rapid cooling. After 15 minutes of ice bath, steak temperature was down to 44°F indicting that steak was rapidly coming to proper temperatures. Corrective Action: Corrected at time of inspection.

Observed ants on floor, near hand sink, and inside dry storage above hot held food. Establishment must be maintained free of pests and all pest control measures must be conducted by a licensed pest control specialist. Must eliminate current pest control problem and obtain pest control from a certified and licensed pest control specialist. PIC has been instructed to have ants addressed and look for any areas of the truck that might need tighter seals/ repair. Corrective Action: Correct prior to re-inspection.

Anything not able to be put in squeeze bottles (example: salsas) should be kept inside of the truck at all times to avoid contamination from weather, etc. PIC transferred self-serve vegetables to truck for storage. Corrective Action: Corrected at time of inspection.
