Inspector's notes

Observed 0 ppm Quat sanitizer in the 3-compartment sink actively being used during time of inspection. Quat sanitizer should be between 200-400 ppm to ensure the dishes are properly sanitized. The sanitizer concentration was made by hand and tested correctly. Please have a technician service the dispenser. In-person reinspection for the sanitizer dispenser will be on Wednesday, February 11th. Corrective Action: Correct prior to re-inspection. 4-501.112 - Priority Foundation: Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures. Addl Notes: Observed 125*F-151*F in the hi temp dish machine actively being used at time of inspection. When food-contact surfaces are being sanitized with hot water in a dish machine, the surface temperature must reach at least 160°F as measured by an irreversible registering temperature measuring device to destroy pathogens that may remain on such surfaces after cleaning. The 3-compartment sink will be used in the meantime. Please have a technician service the dish machine. In-person reinspection for the dish machine will be on Wednesday, February 11th. Corrective Action: Correct prior to re-inspection.

Onsite advisory conducted with kitchen manager. During routine inspection for FD-47581, observed no running water throughout school kitchen. Per PIC, running water was lost about 1 hour prior to inspection. Repair people were onsite at time of inspection.Establishment only had pre-packaged food items at time with lunch ending shortly. Establishment agreed to not handle or prepare any open food items until repairs are completed and running water is restored to kitchen. Establishment has plan in place to utilize catering from, FD-11170, to received only pre-packaged food items that do not require any open food handling. Follow up inspection on 11/29/2023. Reviewed permit suspension policy and imminent health hazards with PIC.Report emailed. No County legal action will result from this inspection.
