Inspector's notes
Arrived onsite, PIC informed inspector that there had been drainage and plumbing issues due to lack of service for the grease trap in the back of the establishment. Establishment was in full operation preparing and servicing TCS foods (such as milk and cooked vegetables). Per PIC, water had been backing up and overflowing from the floor drains and the toilet in the back of the kitchen was inoperable at time of visit since the previous morning. Observed water accumulating in the floor drains underneath the ice machine and the prep sink. When turned on, the prep sink floor drain overflowed and released sewage water. Also observed smell of sewage outside beside the covering of the grease trap. Establishment shall cease operation and shall not prepare or serve food out of a premises with a suspended permit. An alternative method of food service and preparation must be provided until the suspension of this permit is lifted. A permit holder shall immediately discontinue operations and notify the regulatory authority if an imminent health hazard may exist because of an emergency such as a fire, flood, extended interruption of electrical or water service, sewage backup, misuse of poisonous or toxic materials, onset of an apparent foodborne illness outbreak, gross insanitary occurrence or condition, or other circumstance that may endanger public health. Correct at once.

Observed no hand washing soap in either the bathroom or the hand washing sink near the food prep area. Informed PIC who stated it had been a few days since it was replaced. Had janitorial staff replace the dispensers during time of inspection. Ensure all hand washing sinks are readily available and stocked with adequate accommodations.
