Predefined Comment: No County legal action will result from this inspection.Discussed with Operator to have paper towels available in dispensers.Discussed cooking of raw pulled pork with operator including adequate cooling of TCS food items. Observed a walk-in refrigeration unit not in use and used for dry storage. Discussed concerns with sufficient refrigeration for volume of foods and meals served throughout the day. Ensure that current walk-in unit is meeting refrigeration needs for suppl of food and meals served. Discussed to maintain temperature logs on a daily basis for refrigeration equipment and hot holding equipment in kitchen areas.

100*F internal temperature for cheeseburger stored in hot holding unit. All Time/ temperature control for safety (TCS) food items shall be hot held at 135*F or above. Operator proceeded to reheat cheeseburger at 165*F before service. Ensure to verify final cooking temperatures and keep in hot holding units at minimum 135*F or above. Corrective Action: Corrected at time of inspection.
