The tomatoes were moved to the walk-in for rapid cooling at the time of inspection. Observed a 6" + deep container of cheese sauce at 47 Deg. F. in the walk-in. Per operator it was just placed into the container with-in the last hour. Be sure to check the holding temperatures of products prior to putting them in containers that are over 4" deep Be sure to cool all Time, Temperature,for Safety Foods in the walk-in to 41 Deg. The establishment currently has enough cold holding capacity for their current operations. The establishment has a walk in freezer and three double reach in units that are holding <41 deg F. Manager informed new compressor is being installed tonight and re-inspection is rescheduled for their next business day August 1 2023
