Inspector's notes
Observed open grab and go case with and ambient air temperature of 52*F measured with a min/max thermometer. Several TCS items were measured at an internal temperature of 49*F to 63*F measured with a probing thermometer. Per person in charge (PIC) the items have been in the unit overnight. Discussed with PIC except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Embargoed the TCS items and PIC voluntarily discarded at time of inspection. The embargoed TCS items: sausage egg burrito, beef bean burrito, beef burrito, steak jalapeno burrito, bean cheese burrito, sausage egg sandwich, chicken sandwich, beef cheese sandwich, rack rib sandwich, rice pudding, yogurt parfait, cheesecake, cookie dough, meat cheese tray, salami and pepperjack, salami and colby, Oh Snap! (hot pickles, cold pickles) Ham & turkey sandwich, triple play sandwich, turkey pepperoni sandwich, Italian style wrap, oven roasted turkey sandwich, tuna salad sandwich, chicken salad sandwich, egg salad sandwich. Discussed with PIC to utilize other adequate refrigeration until the grab and go black unit is maintaining at 41*F or less. Corrective Action: Corrected at time of inspection.

Observed a frozen liquid on the ground below the fan in the walk-in freezer. Discussed with PIC to remove the frozen liquid and fix/replace/repair anything that is causing the liquid to buildup. Also observed ice bags stored on the ground. discussed with PIC all food shall be stored 6 inches off the ground. PIC relocated the bagged ice at the time of inspection. Observed employee standing in the food prep area chewing food and actively eating more food. Discussed with Person in Charge (PIC) to ensure food safety, prevent physical contamination and the transmission of disease; employee eating, drinking, beverage storage, and using tobacco must be done in an approved area. PIC redirected employee to the designated area and will retrain on proper eating, drinking, and tobacco use. Corrective Action: Corrected at time of inspection.

Observed drainage pipes missing a 1-inch air gap at the three compartment sink and the turbo chef oven in the food prep area. Discussed with PIC all drainage pipes that empty into floor sinks shall have a minimum of 1 inch of air between the floor sink and the drainage pipe to prevent back syphoning of contaminants. Also observed the hand wash sink next to the three compartment sink functioning, but not effectively attached to the wall. Discussed with PIC all plumbing shall be maintained and in good repair. Corrective Action: Correct prior to next routine inspection.

This inspection was conducted per project manager, Terrence Johnson, to check on the leftover items from the remodel permit RM-09798. Inspection was conducted with Jamin Ruiz. Please address the following items prior to the next routine inspection:1. Replace the leaking vented dual check valve (ASSE 1022) at the connection point of each coffee machines and tea brewer. Noted all vent ports were taped and there are sign of leak from these units. These are not testable unit, so replace them whenever they leak. Do not tape the vent ports as this is how you can monitor if your backflow preventer is working or not. Recommend replacing all non-testable units with a testable unit such as a RPZ, which is testable and repairable. Install the RPZ at the beginning of all the coffee machines’ water connection.2. Provide a self-closing door on the customer's side for the pizza case.No County legal action will result from this inspection.Emailed the report to the store and contractor.
