After discussion with the person in charge, it has been determined that the root cause of the Priority violation #22, 3-501.16(A)(2) and (B), was training staff (a verification breakdown), which resulted in the violation.Reviewed with manager: dented cans.Ensure all employees working with food obtain food worker certification from ANSI certified online site.
Inspector's notes
Near customer service, in two cold bunker cases, assorted TCS foods (raw meat patties, sliced cheeses, cut tomatoes/lettuce, assorted salsas, assorted guacamole with cut tomatoes, cheese dips) with internal temperatures of 47*F-49*F. Per manager, raw meat patties, cheeses, cut vegetables were placed out for sale the previous day and other TCS foods of unknown time when removed from walk in cooler. Assorted TCS foods were discarded. See embargo form. Ambient temperature of two cold bunker cases ranged from 27*F-59*F, alternating between several defrost cycles over a two-hour time frame. Discontinue storing of TCS foods in two cold bunker cases until repaired. Maintain TCS (time/ temperature control for food safety) foods at a cold holding temperature of 41*F or less at all times. Corrective Action: Corrected at time of inspection.
