All TCS foods observed holding at 41*F or below but with air temps higher than 41*F. Advised PIC to move foods and defrost or repair coolers as needed. Core-5-501.115, C: Maintaining Refuse Areas and Enclosures ----- Observed a buildup of grease and debris surrounding the subterranean grease receptacle. PIC stated they had cleaned the areas and found there was a pad of concrete surrounding the receptacle. PIC stated they have requested maintenance to pressure-wash the area. Advised PIC to add additional smoothed concrete to the same curb and sidewalk level so it is sloped to drain. Clean area and maintain a regular cleaning frequency to prevent buildup prior to the next routine inspection. Correct By: Correct Prior To Next Routine Inspection
