Inspector's notes

Observed raw pork and beef thawing at room temperature with the outside portions of meat measuring at 41*F or below and the inside frozen solid. Per PIC, the raw meat was defrosting so it could be cut and immediately prepared. All foods being thawed from frozen must be thawed in an approved manner. Foods must be thawed under refrigeration, under cold running water, or as part of the cooking process. PIC moved the meat to the food prep sink to properly thaw at the time of inspection. Corrective Action: Corrected at time of inspection.

Onsite advisory with owners and RS #1479. Establishment not in operation at the time of inspection. PIC stated a small kitchen fire started overnight on 1/3/2024. PIC stated Mesa Fire Department responded to the incident and found the Ansul system did not deploy and damage was minor. PIC stated all kitchen wares were removed and professionally cleaned and any damage to facilities had been corrected. Establishment is not required to submit for a remodel at this time. Owners stated they will reopen after receiving approval from City of Mesa. A copy of the report was emailed to the manager.No County legal action will result from this inspection.

PIC was shown how to identify approved commercial grade containers with an NSF marking by the inspector and stated they would order approved containers for their foods. Materials that are used in the construction of utensils and food-contact surfaces of equipment shall be durable, corrosion-resistant, and nonabsorbent; sufficient in weight and thickness to withstand repeated warewashing; finished to have a smooth, easily cleanable surface; and resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition.
