Inspector's notes
Observed in the small cold holding unit located underneath the hot dog rollers, tornados, all beef hot dogs, jalapeno cheddar sausage hot dogs, and smoky cheddar sausage hot dogs with a temperature of 49-50*F. Ambient air temperature of the unit was 53*F, measured with a min/max thermometer. Per PIC, the food had been placed into the unit before 5am. Observed in the open air cold holding unit, located in front of self-check-out, tuna, egg, and ham sandwiches, ham and turkey subs, ham and sausage croissants, sausage and egg muffin, sausage and egg biscuit, burritos, omelet sandwich, bacon and sausage sandwich, chicken sandwich, cheeseburger, ribs sandwich, hard boiled eggs, cheese and meat snacks, ritz and cheese, and sliced pickle snacking chips at 48-50*F. Ambient air temperature of the unit was 45*F, measured with a min/max thermometer. Per PIC, the food had been placed into the unit before 5am. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below prior to in person reinspection on Friday, April 24th. Corrective Action: Correct prior to re-inspection.
