Inspector's notes

Observed 154*F and 147*F in the hit temp dish machine in the back of house, utilizing a min/max thermometer, actively in use at time of inspection. When food-contact surfaces are being sanitized with hot water in a dish machine, the surface temperature must reach at least 160°F as measured by an irreversible registering temperature measuring device to destroy pathogens that may remain on such surfaces after cleaning. The technician arrived while the inspector was still onsite. The PIC will utilize the 3 comp sink in the meantime. Corrective Action: Corrected at time of inspection. 2nd repeat.

Observed 0 ppm Quat sanitizer in the sanitizer buckets in the back of house, and it was discovered the 3-comp sink dispenser was not working correctly. The sanitizer buckets were made by hand, and a technician arrived to service the dispenser. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.

Observed beer cheese in a hot holding unit near the pizza station with a temperature of 114*F, per employee had been in the unit for 20 minutes. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Discussed proper reheating procedures. Corrective Action: Corrected at time of inspection.

Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were from 11am per chef and were discarded by PIC at time of inspection. Discussed temperature logs. Corrective Action: Corrected at time of inspection.
