Inspector's notes

At in use 3-compartment sink, dishware soaking in sink and surface sanitizer <10 seconds. Per manufacture guidelines, dishware is to soak in sanitizer solution minimum 60 seconds. Employee moved all dishware back to sanitizer solution to soak for 60 seconds. Food-contact surfaces sanitized using quaternary ammonia are to be sanitized with a contact time according to manufacturers specifications. Corrective Action: Corrected at time of inspection.

Inspector's notes

At cold holding salad bar, TCS foods (cut lettuce, shredded cheese) with internal temperatures of 55*F-63*F. Per manager, foods were placed out for service <3 hours. Manager stated that all TCS foods are discarded after 4 hours. At time of inspection, time control procedures were written. Moving forward, cold food at salad bar with use time as a public health control. Maintain TCS (time/ temperature control for food safety) foods at a cold holding temperature of 41*F or less at all times. Corrective Action: Corrected at time of inspection.

In warming cabinet, observed broccoli /99F and chicken patties/122F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. These foods were within safe time parameters. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Discussed the option of using time as a control and provided PIC a Time as a Control guidance document. Corrective Action: Corrected at time of inspection.
