Observed 0 ppm chlorine sanitizer in the main dish machine located in the ware-washing area. Chlorine sanitizer should be between 50-100 ppm to ensure the dishes are properly sanitized. The sanitizer bottle was replaced and the machine primed, then tested correctly. Corrective Action: Corrected at time of inspection.

Observed an employee on the salad station use their bare hands to cut and prep a red pepper. Observed an employee in the main bar use their bare hands to garnish a lemon peel. When handling ready to eat foods, tongs, picks, gloves, deli tissue etc. should be used to prevent contamination from bare hands.
