Fried chicken in hot case measured 110-124 degrees F internally during inspection. Food had been cooked about 2 hours prior and was discarded at time, and a service call was placed for end of hot case. Please ensure all time/temperature controlled for safety food items are maintained at 135 degrees F or above when hot holding. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed chicken in the hot holding case located inside of the deli to be between 113-109*F. Per PIC the chicken was made around 1 pm. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above to prevent the growth of pathogens. The PIC opted to discard instead of reheating. All TCS foods improperly hot held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed the hot food in the hot case, as well as the hot wings, in the hot holding case for self serve are under time as a control for 4 hours, and there was no physical documentation showing the time the hot food was placed out and then discarded. Physical documentation is required to ensure the food is potentially held out of temperature and being sold for no longer than 4 hours. The PIC currently uses a tablet to keep track of temperatures in the deli, but this doesn't allow for time as a control tracking, so the PIC will revert back to the paper log for time as a control.
