Observed blueberry jam in the walk-in cooler in deep containers, made 1 hour prior, with a temperature of 108*F. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. All TCS foods being cooled in deep containers were transferred to shallow containers to allow for rapid cooling. Corrective Action: Corrected at time of inspection.

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed jam, made in house, in the tall cold holding unit by the ice machine, with an internal temperature of 48*F. Time/temperature control for safety foods should be cold held at 41*F to prevent the growth of pathogens. PIC stated the jam had been placed into the unit this morning from the walk-in cooler. PIC placed the jam into shallow pans and placed into the walk-in to cool. A temperature taken of the unit with a min/max thermometer was 45-48*F. An additional temperature taken at the end of the inspection showed the unit had reached 34*F. Correct By: Corrected At Time Of Inspection
