Observed cooked onions next to the grill at a temperature of 67*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Per PIC the onions had been out for one hour. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed au jus at 70*F and onion soup at 63*F inside deep containers in the walk-in cooler. Proper cooling methods consists of using shallow pans of 4 inches or less, ice baths, ice wands, and active monitoring with a probe thermometer. PIC stated these food items were made one hour prior and placed the food into an ice bath to rapidly cool. Correct By: Corrected At Time Of Inspection
