Observed opened hot dogs, opened sour cream and cooked chicken not having a date marking. Employee states these foods were opened or pulled from the freezer 2-3 days prior to inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods were properly date marked at the time of inspection. Also reviewed freezer pull date and the importance of that. Corrective Action: Corrected at time of inspection.

Observed the dishwasher in the kitchen being used but not dispensing appropriate concentrations of chlorine sanitizer (recorded 0 ppm). Employee called for the unit to be serviced and will only use the 3 compartment sink until working properly. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Corrective Action: Corrected at time of inspection.

Observed taco meat on the flat top grill having an internal temperature of 120*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.

Prep cooler was not being used to store TCS foods at the time of inspection and person in charge states they are in the process of getting it repaired. Discussed the importance of having all kitchen equipment working properly and in good repair to ensure food safety. Corrective Action: Correct prior to next routine inspection.
