Observed an in-use ice machine with black, organic-like material growing on and behind the deflector panel. Per PIC ice from the machine is used in customer drinks. Educated PIC that ice is considered a food item when used in customer drinks. Instructed PIC in clean-in-place procedure using a hot soapy rinse, hot water rinse, and hot water plus sanitizer rinse. Correct by next routine inspection.

Inspector's notes
Observed a three-compartment sink with sanitizer below 150ppm. Facility was not utilizing sink at time of inspection. When asked, employee stated sanitizer sink was prepared <15min prior to inspection. Employee activated sanitizer system to add more sanitizer to sink, but sanitizer still tested below 150ppm. Educated PIC that sanitizer must be dispensed between 150-400ppm, PIC contacted ECOLAB to service sanitizer dispenser. Educated PIC and employee on how to hand dose sanitizer until pump is serviced. Correct prior to next routine inspection.
