Observed a three-compartment sink with food contact surfaces soaking in quat sanitizer with a concertation of >500ppm. Educated PIC that all sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. PIC relocated all food contact surfaces to be rewashed, rinsed, and properly sanitized. Sanitizer was diluted by PIC to approved levels at time of inspection. Corrected at time of inspection.

Observed an ice machine in use with black, slimy, organic-like matter growing along water reservoir. Educated PIC that ice used in drinks is a food item and the ice machine should be treated like a food contact surface. Instructed PIC to clean in place using hot soapy water, hot water rinse, and hot water with sanitizer rinse. Correct prior to next routine inspection.
