Observed employees wiping off food contact surfaces with wiping clothes, when tested, sanitizer bucket tested at <50ppm of chlorine. Educated PIC on properly setting up sanitizer buckets with a bleach concentration of 50-100ppm. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrected at time of inspection.
