-- In warming drawer, observed multiple chicken strips with internal temperatures ranging between 117°F-124°F using probing thermometer. All other TCS items maintained at 135°F or higher. The PIC stated the chicken strips were prepared approximately 20 minutes prior to the inspection. All TCS foods improperly hot held were voluntarily discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.

-- Multiple covered and stacked containers of breakfast burritos in walk-in refrigerator had internal temperatures ranging between 49°F-54°F using probing thermometer. The breakfast burritos were prepared approximately 3 to 3.5 hours prior to the inspection according to their time stamps. All TCS foods in the cooling process were uncovered and unstacked to allow for rapid cooling at the time of inspection. TCS foods prepared at ambient temperature must be cooled in within 4 hours or less by: storing uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Inspector's notes

Cheese, butter, and pancakes found with internal temperatures of 49-52*F inside of the make-line reach-in cooler. The ambient temperature of the cooler was 48-50*F. The door to the cooler was observed to be ajar multiple times during the inspection as the door pops open anytime the opposite side's door is shut. The cooler will be monitored to ensure it is able to maintain an ambient temperature of 41*F or below before using it to cold hold TCS food items. The prep reach-in was also observed with an internal temperature of 50*F. Shredded lettuce and cheese were inside the prep cooler since 7:00 AM. The cooler will not be used for cold holding TCS food items until it is repaired/replaced and able to maintain an ambient of 41*F or below. Both coolers were last checked and known to be at 41*F or below at 4:00 AM today. All TCS food items were discarded.

No paper towels available at hand wash stations in kitchen upon inspector's arrival. PIC stated they had an issue with their recent order and did not receive paper towels for their dispensers. PIC provided napkins for hand drying until paper towels were received by another sister location. Air hand dryers in men's restroom were not operational at time of inspection. PIC stated the breaker may have been tripped and had maintenance alerted. Paper towels for 2 of the 3 hand wash stations were provided during inspection. The 3rd least utilized hand wash station will still use napkins until more paper towels are received. Napkins were also provided to the men's restroom for temporary hand drying measures. Please ensure hand drying provisions are available at each hand wash station. Corrective Action: Corrected at time of inspection.
