Observed multiple salsas located at the salsa bar registering internal temperatures ranging between 45°F-47°F. Per the manager, the salsas were placed out at the salsa bar 90 minutes prior to the time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Instructed manager to add additional ice to salsa bar. Also discussed utilizing Time-AS-A-Control for the salsas as well. Corrective Action: Corrected at time of inspection.

Observed fryer baskets with broken wires. Once wires begin to break off from the main fryer basket body, the fryer basket should be replaced. Discussed with person in charge to remove those fryer baskets from service once the wires break and separate. Person in charge swapped out the damaged fryer baskets for different ones. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. Corrective Action: Corrected at time of inspection.

Observed several pans stored on the drying rack that were nested with water still inside of them. Person in charge separated the nested pans so they can fully air dry. Prior to nesting the pans, the pans should be fully air-dried to prevent moisture/water from being trapped in-between the nested pans. All equipment and food contact surfaces must be air-dried after properly cleaning and sanitizing. Corrective Action: Corrected at time of inspection.

Observed bins of cheese and potatoes mix, whole hot dogs in a package, chopped hot dogs, cooked bacon, chopped tomatoes, chopped cabbage, sliced cucumber, chopped avocado, shredded cheese, sour cream and roasted chilis inside their make station all with internal temperatures as measured using a probe thermometer ranging between 51°- 53° F. PIC embargoed all of the food in the cold holding unit. PIC made service call to have unit looked at and then prepared an ice bath to keep foods cold holding at 41° F.
