Fried fish in prep top cooler measured 55-62 degrees F internally, fish containers were packed tightly into unit which was limiting cooling capacity. Person in charge said it had been portioned recently and moved it to different cooler to cool back down at time. Pease ensure all time/temperature controlled for safety (TCS) food items are maintained at 41 degrees F or below when cold holding. Corrective Action: Corrected at time of inspection.
