observed in the food hot display case, cooked chicken, refried bean, carnitas at 116-122 deg f . observed the warmer case partially taped to stay open. recommended to keep lids fully closed. also steam table water level was reviewed. noted low at the bottom of the deep metal holding pans. suggested to increase the hot water level. to ensure tcs food is kept and maintained at 135 deg f or higher. manager reheated tcsfood to 165 deg f , and added more hot water. Corrective Action: Corrected at time of inspection.
