in the grill line reach-in cooler near the soda machine, observed some tcs food such as sour creme, diced ham, diced tomatoes, shredded cheese, all at 49-53 deg f . discussed with manager, strategies such as using smaller metal pans, keeping lids on metal pans, placing excess food in the back room upright coolers till needed, use of ice bath. manager removed excess food. please ensure tcs food is kept at 41 deg f see embargo Corrective Action: Corrected at time of inspection.
