Observed a container of sausage links in the small undercounter refrigerator in the front service area that did not have a date marking on the container. According to the person in charge, it was unclear when the sausage links had been opened or for how long they had been opened for. The sausage links were embargoed at time of inspection (see embargo form). Observed another different container of hot dogs also without a date mark. According to the person in charge, these had been opened the day prior and were date marked at time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.

Observed sanitizer concentration levels in a sanitizer spray bottle that were testing well above the 150ppm - 400 ppm sanitizer range for quat sanitizer used at the establishment according to the testing strips. Sanitizer was diluted by PIC to approved levels at time of inspection. Discussed with person in charge to train employees on how to use sanitizer testing strips with sanitizer solution. Discussed with person in charge to regularly use testing strips to check sanitizer concentration levels. 2ND CONSECUTIVE PRIORITY VIOLATION.* Corrective Action: Corrected at time of inspection.

According to the person in charge, the items had been opened either the day prior or the day of. All RTE/TCS foods were properly date marked at the time of inspection.
