A pattern of non-compliance is developing for Priority violation # [20],{3-501.16(A)(2) and (B)], which has been noted during this inspection. The ambient air temperature of the walk-in was between 46-52°F. The Person in Charge (PIC) stated they had not checked the temperature of this unit within the last 4 hours, so TCS food was discarded (see embargo form). All TCS food items will be stored in the reach-in refrigerator until this unit is repaired and able to maintain temperatures. Discussed cold holding policies, monitoring procedures, and public health risks with PIC. The PIC was not aware of the last time it was below 41°F. Discussed cold holding capacity requirements and monitoring procedures with PIC. A technician was scheduled for same-day service. A 24-hour reinspection will occur to ensure the walk-in refrigerator is repaired and able to maintain food with internal temperatures of 41°F or below at all times.
