Inspector's notes

Observed a scoop of ice laying in the ice inside of the ice machine. Discussed with person in charge to store the ice scoop in a clean, dry container or if it is kept in the ice machine, to utilize the hook inside to hold the scoop or have it stored handle-up. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection. Corrective Action: Corrected at time of inspection.

For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. --Observed multiple TCS foods (such as cooked beans and mozzarella) in the back right refrigeration unit in the kitchen with internal temperatures between 46-48°F. The ambient air temperature in this unit was 46.7°F at the time of inspection. The Person in Charge (PIC) stated food in this unit was less than 41°F less than 4 hours before inspection time, so food was moved to a different unit to cool down. Discussed cold holding policies and procedures with the PIC. Ensure this unit is repaired and able to maintain food with internal temperature of 41°F at all times.
