The person in charge moved the large rubber mats and placed soap at the sink. Discussed with person in charge to maintain all handwashing sinks free and clear of obstructions and supplied with soap and paper towels at all times. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. Observed raw tail-on shrimp, raw butterflied shrimp and sliced tomatoes with internal temperatures as measured using a probe thermometer of 46°F - 48°F in a prep unit across from the griddle on the cooking line. According to the person in charge, the shrimp and tomatoes were prepped within the last couple of hours and were moved to the walk-in cooler to chill down to 41°F. Discussed with person in charge to cool foods in the walk-in cooler or to utilize ice baths to rapidly chill the food down to 41°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

The following guidelines must be followed for shellstock tags at all times: Shellstock tags or labels shall remain attached to the container in which the Shellstock are received until the container is empty; The date when the last Shellstock from container is sold or served shall be recorded on the tag or label; Maintain and retain tags for 90 calendar days from date recorded on tag or label using an approved record keeping system that keeps records in a chronological order; and Ensure Shellstock from one tagged or labeled container are not commingled with Shellstock from another container with different certification numbers, different harvest dates, or different growing areas. The walk-in unit was not functioning properly at the time of inspection (see violation 31). The PIC stated the walk-in was maintaining proper temperatures less than 4 hours before inspection time. Ice was placed in the walk-in and on top of food to ensure TCS food in this unit can maintain internal temperatures of 41°F or below until this unit is repaired. Observed TCS food (such as cut tomatoes and shrimp) in the prep unit by the cook line with internal temperatures between 43-47°F at the time of inspection. The unit had an ambient air temperature of 38.1°F, but the unit's lid was being kept open. Ensure this lid stays closed to maintain temperatures of food. Ice was placed on the food in this unit to lower and maintain internal temperatures. Ensure all food being maintained by cold holding has internal temperatures of 41°F or below at all times.
