At in use 3-compartment sink, employee sanitized dishware <5 seconds. Establishment uses quat sanitizer and per manufacture guidelines dishware is to soak in sanitizer solution minimum 60 seconds. Manager moved dishware back to sanitizer solution to soak for additional time. Food-contact surfaces sanitized using quaternary ammonia is to be sanitized with a contact time according to manufacturers specifications. Corrective Action: Corrected at time of inspection.
