Inspector's notes
In log book, employee added a 4th batch of rice with times about half an hour ahead of inspection start time. Per employee, only three batches of rice have been prepared for the day. When asked to demonstrate calibration and pH testing of rice, employee unable to demonstrate procedures. A re-inspection will be conducted to ensure all employees are trained on proper pH testing of sushi rice. All procedures in approved variance/HACCP plan are to be conformed to at all times. Corrective Action: Correct prior to re-inspection.
