Two opened packages of hot dogs inside reach in cooler underneath hot dog roller temped at 60F to 62F with thermocouple for more than 4 hours per employee. Employee disposed of hot dogs. Reach in temped at 62F with thermocouple. Utilize tall reach in until repaired. Discussed importance of maintaining all TCS foods at 41F to prevent foodborne illness.
