Observed cut lettuce, cut tomato, sliced cheese, shredded cheese, cubed chicken, and ham 45-52*f degrees on main prep line open top fridge . Per PIC items had been prepped with the last hour. Discussed cooling items in a location that expedites cooling process. Items moved to double door fridge to cool. Corrective Action: Corrected at time of inspection.

All items aside from sliced cheese were prepared day off and sent double door fridge to cool. Sliced cheese discarded. Corrective Action: Corrected at time of inspection.
