Inspector's notes

Observed an ice scoop stored directly in the ice inside of the ice machine by the dry storage room. PIC removed the scoop. Discussed using the scoop storage inside of the machine or another method to properly store the ice scoop. When ice is dispensed or melts the ice in the bin shifts, which may cause the scoop to become buried and the ice to be contaminated by the handle. Corrective Action: Corrected at time of inspection.

Establishment has replaced homestyle for homestyle Frigidaire black and silver model with no backsplash and 5burner unit. As stated in previous inspections if the GE is replaced, a commercial NSF or equivalent would be needed. RemoveFrigidaire Gallery black and silver model prior to next routine inspection.Recommend: adding hot water line booster to main hand sink.

Inspector's notes

Inside main two door refrigerator with large covered tub full of cooked pasta. Internal temperature of cooked pasta is at 90*F. Notified Person In Charge (PIC) and employee. Employee verified with internal thermometer cooling cooked pasta is at 85*F. Per employee pasta was prepared at 6am today. Time is 11am. Pasta would need to be below 70*F within two hours at 8am today. Also observed covered extra large metal bowl with cooked pasta and cooked chicken. Internal temperature is at 100*F. Notified PIC and employee. Per employee this was prepared at 7:30am; at 9:30am cooked pasta chicken salad would need to be 41*F. Time is 11am. PIC will have employee discard all improperly cooled cooked pasta and cooked chicken pasta salad. ======Within 2 hours from 135°F to 70°F and within a total of 6 hours from 135°F and 41°F or less. Corrective Action: Corrected at time of inspection.
