Inspector's notes
Observed inside main walk in unit with side glass doors with three tier of enclosed containers with cut lettuce packed. Internal temperatures of each was 44.1-45.8*F with inspector and establishment thermometer. Notified Person In Charge (PIC). Time sticker indicated all cut lettuce prepared at 6am today. PIC directed employee to discard improperly cooled cut lettuce containers. Corrective Action: Corrected at time of inspection.

Quat sanitizer solution in cloth bucket in the cookline area with concentration at less than 150ppm. Solution was remade to proper concentration. Ensure that sanitizers are at proper concentration according to manufactures directions. Corrective Action: Corrected at time of inspection.
