A large container of cooked corn kernels on the countertop was measured at 110 degrees F after 1 hour of cooling. The food depth was at 7 inches and partially covered. The employee then divided the corn into two shallow containers and put them in the refrigerator uncovered. Cool hot foods in shallow, uncovered containers with food depths of 4 inches or less. Cool 135F to 70F in two hours, then 70F to 41F in additional 4 hours, for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.
