Observed tapioca boba at temperature of 80*F measured with a probing thermometer. Per Person in charge (PIC) the boba is under time as control for a 4 hour window. PIC was unable to provide a written policy and observed no time stamp on boba. Per PIC the boba had been placed under time as control less than 4 hours prior to inspection. PIC placed 4 hour window on time stamp. Assisted PIC with creating Time as Public Health Control (TPHC) policy. Corrective Action: Corrected at time of inspection.

#33 — Proper Cooling Methods Used; Adequate Equipment for Temperature ControlPriority foundation3-501.15

Inspector's notes

Observed a deep pitcher, more than 4 inches deep, of macchiato cream with an internal temperature of 57*F measured with a probing thermometer. Per PIC the cream was made and placed in the unit an hour prior to inspection. Also observed condensed milk in a top refrigeration of a prep table, with an internal temperature of 50*F measured with a probing thermometer. Per PIC this container was placed in the top unit less than 4 hours prior to inspection. Discussed with PIC TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. All TCS foods being cooled in deep containers were transferred to shallow containers to allow for rapid cooling. Discussed with PIC prep tables are for cold holding and not adequately designed for cooling. Corrective Action: Corrected at time of inspection.

Follow up with cleaning__ Most floor sinks are cleaned except for the ones under large equipment. Please provide larger access point or re-arrange the equipment to allow access to the floor sinks for cleaning purposes.

In-effective visit__ Stopped by to check on the status of correction to items noted in previous report. The establishment is not open at the time of inspection. Owner do not work on Mondays and Tuesdays. Re-scheduled the re-inspection.
